The Humble Violet and its Benefits
Such a lovely mild winter day yesterday, it was great getting out and enjoying the warm sunshine and taking care of the garden. So pleasing seeing all the violets, their shy little heads popping up from their beds of verdant green. Not only do they have the sweetest perfume for which they are most often used, but are also delish in salads or sugared on top of cupcakes. But did you know the fresh young leaves are also edible and full of vitamins, they are great in salads or soup and at end of winter , beginning of spring when fresh greens are not so readily available. I actually got my flatmate to taste one tonight, he was pleasantly surprized at the flavour. Violets also can be used for many potions, having meaning healing properties.
